SAN DIEGO, California – Enjoying a meal featuring A5 Wagyu is often described as eating the richest dessert they’ve ever enjoyed in steak form. “Wagyu” translates to Japanese Cow, and A5 is the highest possible quality rating awarded by the Japanese government. A simple meal featuring high-quality ingredients and minimal additional flavoring would be perfect to offset the intense flavor of the Wagyu. Roasted organic vegetables like squash, broccoli, and potatoes could be baked in olive oil, and seasoned with salt and pepper, to offer a rich palate of natural flavors on your plate. Aside from the commonly recommended Cabernet and younger Burgundy, common wine pairings for the A5 Wagyu also include a Shiraz, a Right-Bank Bordeaux, and a Sangiovese.

If you desire a medium to full-bodied profile, consider a Shiraz to pair with your A5 Wagyu. The pleasant notes of smokiness and mint bring balance and compliment the rich flavor of the beef.

An appropriately paired Right-Bank Bordeaux brings a softer mouthfeel and less of an acidic flavor. As they are predominantly Merlot-based and are often cited as deep, aromatic, and smooth, one should pair their A5 Wagyu with a Right-Bank for a truly luxurious meal experience. Pairing with a Sangiovese, specifically a Chianti, is also a great choice. Offering a mix of earthy, savory, and sweet flavors, the acidity pairs excellently with A5 Wagyu that holds a higher “BMS,” or “Beef Marble Score.” Common liquor/cocktail pairings include Japanese Whisky, a Highball, and Club Soda with a splash of Cranberry Juice

It is highly recommended when working with A5 Wagyu to give full consideration to how your meal is coordinated around the Wagyu. As this is high quality and a high-priced album, the last thing you want to do is to sully your A5 Wagyu with an incompatible flavor.
